I know lemonade scones- sounds crazy but they actually work. Using just 3 (yes 3!) ingredients I made light, fluffy scones that Bake Off should be proud off. I feel Mary Berry would give me some kind words even if Paul Hollywood undoubtedly wouldn't. Anyway, Bake Off dreams aside- it really is the simplest of recipes-  first saw it on Facebook and then on Nigella's website.

:: You will need ::

:: 750g self-raising flour
:: 375ml lemonade
:: 300ml double cream (I used lactose free cream and it seemed to work fine)

:: What you will need to do ::

:: Combine all your ingredients and knead until you have formed a dough.

:: Once formed, roll out dough to a 2cm thickness and cut out your scones.
:: Egg wash the top if desired and place in preheated oven (180 fan) for 10-15 minutes.

See! As simple as that and light and airy too. I'm going to try them again as cheese scones and see how they turn out. Now where's my Bake Off application form..........
